Cauliflower Stir Fry

Medium sized saute pan about 8 inches

1 tbsp olive oil

1 tsp garlic clove minced

1 tsp fresh ginger

½ cup raw scallions

12 oz bag organic riced cauliflower fresh or frozen

½ tsp of grated lemon rind

½ lemon squeezed

1 tbsp coconut aminos

½ cup peas fresh or frozen

Himalayan sea salt and ground rainbow peppercorn to taste

  1. Start by heating your pan over medium-high heat then add the olive oil. Let the oil heat up, about 30 seconds.
  2. Once the oil is heated add the garlic. Sauté the garlic for about 30 seconds or until slightly golden.
  3. Stir in the ginger and scallions and mix for about 15 seconds.
  4. Add the cauliflower to the pan. Sauté that for about 5 minutes.
  5. Sprinkle in the lemon zest, the lemon juice and the coconut aminos and toss until well combined.
  6. Stir in the peas and remove from heat.
  7. Add salt and pepper to taste.
